Carmelized Brussels Sprouts


    Caramelized Brussels Sprouts

    Paired with ArborBrook Klipsun Vineyards MLH Sauvignon Blanc

    6 strips of bacon diced

    2 shallots thinly sliced

    1 lb washed fresh Brussels sprouts cut in half

    Pepper to taste

    2 cloves garlic minced

    1 cup MLH Sauvignon Blanc

    1-2 tablespoons balsamic glaze

    Fry the diced bacon and when crisp remove and place on a paper towel.  Leave grease in the pan and fry the shallots till crisp and remove and place with the bacon on the paper towel. With the remaining grease in the pan over high heat fry the Brussels sprouts stirring every few minutes till most of them are browned.  Add the garlic and stir for a minute till garlic is fragerant.  Pour in the Sauvignon Blanc and cook over medium heat till the wine is reduced and soaked into the Brussels sprouts, about 7-10 minutes.  Drizzle in the balsamic glaze and cook another minute to caramelize the glaze.  Plate the sprouts on a warm platter and top with the crisp bacon and shallots.
