    Oysters with Citrus Cucumber Relish

    Paired with ArborBrook Klipsun Vineyards MLH Sauvignon Blanc

    For this recipe I prefer raw oysters but it is just as good over oyster’s just popped open on a BBQ over med-high heat.

    1 large English cucumber seed removed and small diced

    ½ shallots minced

    ½ jalapeno minced

    Zest and juice from 1 lemon

    3 tablespoons of chopped cilantro

    1 tablespoon minced dill

    ¼ cup champagne vinegar

    2 teaspoons fine sugar

    Mix the cucumber relish or Mignonette as some call it together and let set in the fridge overnight or room temp after making it 1 hour so flavors mix.
